The definition of the volatile organic compounds profile plants is an important tool for food quality and authenticity assessment. aim this study was to quantitative determination three Artemisia campestris L. subsp. glutinosa, Lavandula angustifolia Mill., Zingiber officinale rosch. using Gas Chromatography-Mass Spectrometry (SPME/GC-MS). Thirty-three were determined in application SPME/GC-MS. α-Curcumene (%34.41), eucalyptol (%20.91), characterized as a major compound ginger plant extract. For camphor (31.78), α-Thujone (16.82) found most abundant compounds. Besides (15.10), linalool (11.98) detected Mill.
